Doctor Cake

I made this cake for a Dr. friend of mine. I am constantly giving him a hard time for not updating his wardrobe so I decided to use a retro shirt and tie. When I found out it was his birthday I couldn't resist.
There is also an inside joke for the name, he misspelled his name on one of his log in. His name is Troy and he accidentally typed Trot. I thought it was funny and I give him a hard time about it.
His family is some of our favorite people so I enjoyed making a cake for him.

When his wife told me he wanted a Chocolate Mayonnaise cake my first thought was, "gross", but come to find out, after some research, it was made popular around "The Depression" when eggs, milk and butter were rationed. (kinda makes you think we don't have it so bad) I found many recipes and people actually raved about it.
Meanwhile, I set out to make the cake. I tried the first recipe and it was ok, a bit dry, maybe I cooked it to long so I made that the bottom layer.
Next cake was better and moist, that was the top layer.
The good thing about making cakes for friends, they are forgiving if the cake is not perfect. I decided to jazz it up a bit with some hot fudge frosting. Yum! Me and my hubbs kept eating the frosting I had to make another batch. Yeah it was good. So if the cake was not so great the frosting made up for it.
