Simply Saturday: Sugar Cookies n' M&M's


As you have probably noticed I have not posted in over a week. I took a trip to California for my Grandpa's funeral and was busy with family and such, that I could not step away to blog. I know you understand and thank you. I had a wonderful time with my family and my Grandpa's service was beautiful.
My brother sang one of my Grandpa's favorite songs, "I'll Fly Away", it was so touching. The link is here if you would like to listen to it. Pardon my sniffles, I couldn't help but shed a few tears.

At times like these, I want to be comforted. I think of my mom and some of the baking we did together. One of her favorite things to bake was sugar cookies with M&M's, or as my son affectionately calls them, m m's.
If you need comforting ASAP, go to the store and buy pre-made cookie dough and m m's. Cut the dough in slices, press some M&M's on top and bake. A yummy quick fix, however, if you love sugar cookies as I do you will go the extra mile and make your favorite recipe. 

 I found mine on browneyedbaker.com, here. I love her blog and these are fabulous for everyday sugar cookies. They cut-out ok, but not my favorite for cut-outs. I will share my other favorites at the end of this post. If you want to skip to those, just scroll on down, I won't be offended. I promise!

For these sugar cookies I basically used the one from Brown Eyed Baker.

You will need:
2 cups (10 ounces) all-purpose flour
½ teaspoon baking powder
½ teaspoon salt
16 tablespoons (2 sticks) unsalted butter, softened but still cool
1 cup (7 ounces) granulated sugar, plus ½ cup for rolling dough
1 tablespoon light brown sugar
1 large egg
1½ teaspoons vanilla extract

1. Adjust the oven racks to the upper- and lower-middle positions and heat the oven to 350 degrees F. Line 2 large baking sheets with parchment paper or spray them with nonstick cooking spray.
Whisk the flour, baking powder, and salt together in a medium bowl; set aside.

2. Cream the butter, the 1 cup granulated sugar, and the brown sugar at medium speed until light and fluffy, about 3 minutes, scraping down the sides of the bowl with a rubber spatula as needed. Add the egg and vanilla; beat at medium speed until combined, about 30 seconds. Add the dry ingredients and beat at low speed until just combined, about 30 seconds, scraping down the bowl as needed.

3. Place a ball of the dough on some cling wrap and form into a "log" shape. Roll up and place in refrigerator until firm. See picture below

4. Once firm, unroll, slice and place onto cookie sheets. Then take your m m's and press into cookie. My boys love helping on this part. They are just too cute!

They loaded them up with m m's! I taught them well.



5. Bake until the cookies are golden brown around the edges and their center are just set and very lightly colored, 15 to 18 minutes, rotating the baking sheets front to back and top to bottom halfway through the baking time. Cool the cookies on the baking sheets about 3 minutes; using a wide metal spatula, transfer the cookies to a wire rack and cool to room temperature.


You can enjoy these right away like we did.....


or  Store in an airtight container at room temperature.
