Life Lessons and Cake Truffles

I made a cake this week for the "Miso Bakes Challenge". I was so excited, I had this image in my head on how I wanted the cake to look. Matter of fact, I laid awake at night thinking about how great it was going to be and how everyone in blog land would want to visit my blog afterward. I would have at least 100 followers by week's end.  


Well, the challenge snuck up on me and I found myself alone, with my three boys (because my husband had to go out of ) and the cake was due the next day. Great! I figured I would get my boys involved and let them have some fun with icing while I made this "cake of the century". 



 I started decorating the cake, there were specific requirements, but that was not going to slow me down. No, that was inspiring, so I piped on the first part of my vision.... huh.... didn't look so good. It was downright hideous. Luckily I only did one side in case this very thing happened. I started in on the other side.... Snap! I laid awake at night in vain! I am a horrible visionary. Needless to say, the kids had pink and red buttercream all over themselves and the kitchen, and I was trying not to burst into tears. So I decided to make the best of it and go decorate with som love, literally. (You will understand when you see the cake)
I sent her a picture of my cake and waited patiently the next day for the cake to post on her blog. ...... nothing..... what? I decided to visit her facebook page only to find out she extended the challenge a few more days! Seriously!? I wonder if there were other cake lovers out there in my exact predicament. The thought did cross my mind to make another cake and tell dear Miso... psych! Here is the real one. 
In the end I decided this is a "Que Sera Sera" moment. Whatever will be, will be and I learned a valuable lesson in pride. I write this blog for the fun of it, not for any special recognition. I mean seriously, who do I think I am, the Cake Boss. Hardly, but I am Italian and make cakes, so maybe a little. 


On the plus side, I had some cake, buttercream and ganache left over screaming for me to make cake truffles. So let's talk about those and not the cake. Don't get me wrong, I had a blast decorating it, even with my boys throwing buttercream around the kitchen. Next time, yes there will be a next time, I will be a tad more humble. Ok ALOT more humble and just decorate from the heart with no agenda.



You will need:

Buttercream or Store bought frosting of choice
4 oz cream cheese
Cake (I used 24 mini cupcakes)


Mix the buttercream and cream cheese.


Stir in some crumbled cake. If it is not stiff enough you could put it in the fridge for a bit to harden.


Roll dough out, I ran out of parchment paper again. So shiny tinfoil photo.
I put them in the freezer for about an hour.


Roll in Ganache.


Place back in freezer or fridge to harden.
I was in a hurry so they are not as pretty as they should be, but they were tasty. A great way to use leftovers. I'm all about not wasting anything.

I know what you are thinking..... "I want to see the cake." Well..... allright.

  1. What a great story. I find that my vision never quite materialises into how it is in my head - my best cakes tend to be the ones that evolve as I am going along. :o)
